Expanding the range of flours utilized and enhancing with functional ingredients like mushrooms can transform your flapjacks into a perfectly balanced snack, ideal for pre or post-workout fueling, or even a bedtime treat. Select the ideal mushroom powder, each medicinal powder like Lionās Mane, Cordyceps, Maitake, or Chaga will impart a unique functional enhancement to the recipe, influencing focus, stamina, immunity, and recovery.šŖ
š„ Functional Mushroom Flapjacks (a.k.a. Flap Jakes)Ā Ingredients:
- ¾ cup flour of your choice (Banana, oat, almond, or whole wheat - your call!)
- ¼ cup mushroom powderĀ (Choose your boost: Lionās Mane for focus, Cordyceps for energy, Maitake for immunity, or Tremella for skin hydration)
- 2 tsp baking powder
- ¼ tsp salt
- 1 tbsp sugar (coconut, brown, or any you prefer)
- 1 tsp vanilla extract (or vanilla powder)
- 1 egg (or plant-based substitute like flax egg: 1 tbsp flaxseed + 3 tbsp water)
- 1 cup milk (dairy, almond, oat, or coconut all work great)

- Add a small mashed banana for natural sweetness and potassium
- Add blueberries for a fresh flavor burstĀ
- If you are not a fan of mushrooms then use hemp seed protein powder for extra recovery support
- Sprinkle in cinnamon, cacao or nutmeg for warmth and depth
- To enhance the richness and savory essence of your flap jack, elevate the mushroom powder to 1/2 and reduce the flour to 1/2 - the choice of mushroom will strongly influence the texture, making it more culinary experimentation.

- In a large bowl, whisk together all dry ingredients.
- In a separate bowl, mix the egg (or substitute), milk, and vanilla.
- Combine wet and dry ingredients until just mixed. Let it rest for 5ā10 minutes for fluffier flapjacks.
